Instructions
- Preheat the Oven: Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Prepare the Meringue: In a large, clean bowl, beat the egg whites with a pinch of salt and cream of tartar using an electric mixer on medium speed until soft peaks form. Gradually add the granulated sugar, 1 tablespoon at a time, and continue beating until the meringue is thick and glossy, and stiff peaks form. Add the vanilla extract and beat to combine.
- Shape the Nests: Using a spoon or piping bag, scoop or pipe the meringue onto the prepared baking sheet in small nest-like shapes. You can create a well in the center of each mound to mimic a nest shape.
- Bake the Meringues: Bake the meringue nests in the preheated oven for 1 to 1 1/2 hours, or until they are firm to the touch and can easily lift off the parchment paper. Turn off the oven and let the meringues cool in the oven for an hour to prevent cracking.
- Prepare the Chocolate Drizzle: While the meringues are cooling, melt the chocolate chips and butter together in a microwave-safe bowl in 20-30 second intervals, stirring in between, until smooth and fully melted.
- Assemble the Nests: Once the meringues are completely cooled, drizzle the melted chocolate over the nests. Fill the centers with the candy eggs of your choice (mini chocolate eggs or jelly beans work great).
- Let the Chocolate Set: Allow the chocolate to harden slightly before serving.
Notes
- Make sure the bowl and utensils used for the meringue are completely clean and free of any grease to ensure the egg whites whip properly.
- For an extra touch, you can add pastel-colored sprinkles or coconut flakes to the meringue nests before baking to give them a more festive look.
- These nests can be made ahead of time. Store them in an airtight container at room temperature for up to 2-3 days.
- If you prefer, you can use white chocolate instead of semisweet chocolate for a different flavor.
