Description

This Chocolate Mousse is a luxurious and elegant dessert that’s light and airy, featuring a rich chocolate flavor. Perfect for special occasions or as a decadent treat, it’s sure to impress!


Ingredients

  • 6 oz semisweet or dark chocolate, chopped
  • 3 tablespoons unsalted butter, cubed
  • 3 large eggs, separated
  • 1/4 cup granulated sugar, divided
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Optional toppings: whipped cream, chocolate shavings, or fresh berries

Instructions

  • Melt the Chocolate: In a heatproof bowl, melt the chopped chocolate and butter together over a double boiler (or in the microwave in 20-second intervals, stirring in between). Stir until smooth, then set aside to cool slightly.
  • Beat Egg Yolks: In a separate bowl, whisk the egg yolks with 2 tablespoons of sugar until pale and thick. Slowly whisk in the melted chocolate mixture until smooth. Set aside.
  • Whip the Cream: In another bowl, whip the heavy cream and vanilla extract until soft peaks form. Be careful not to overwhip. Set aside in the refrigerator.
  • Beat Egg Whites: In a clean bowl, beat the egg whites with the remaining 2 tablespoons of sugar until stiff peaks form.
  • Fold Everything Together:
    • Gently fold the whipped cream into the chocolate mixture until mostly combined.
    • Next, gently fold the beaten egg whites into the chocolate mixture in two additions, being careful not to deflate the mousse. Fold until smooth and no white streaks remain.
  • Chill the Mousse: Divide the mousse into serving dishes or glasses and refrigerate for at least 2 hours, or until fully set.
  • Serve: Garnish with whipped cream, chocolate shavings, or fresh berries before serving.
