  • 1 tbsp coconut oil (or vegetable oil, for smooth melting)


Instructions

  1. Prepare the Peanut Butter Filling:
    • In a small bowl, mix together the creamy peanut butter, powdered sugar, softened butter, vanilla extract, and salt (if using) until smooth and well combined.
    • Transfer the peanut butter mixture to a piping bag or a plastic sandwich bag with the tip cut off for easy filling.
  2. Fill the Fortune Cookies:
    • Carefully open the fortune cookies without breaking them.
    • Pipe a small amount of the peanut butter mixture into the center of each cookie, then gently press the cookie back together, making sure the filling is contained inside.
    • Place the filled fortune cookies on a parchment-lined baking sheet or tray.
  3. Melt the Chocolate Coating:
    • In a microwave-safe bowl, melt the semisweet chocolate and coconut oil together in 30-second intervals, stirring in between, until smooth and fully melted.
    • Alternatively, you can melt the chocolate using a double boiler method.
