Description

These Chocolate Pecan Coconut Cookies are the perfect balance of sweet and nutty. The combination of sweetened coconut, semi-sweet chocolate chips, and crunchy pecans creates a delicious treat that’s both chewy and satisfying. Bound together with sweetened condensed milk, these cookies are simple to make and pack a punch of flavor in every bite

Ingredients

Scale
  • 14 oz. bag sweetened coconut flakes
  • 14 oz. can sweetened condensed milk
  • 2 cups semi-sweet chocolate chips
  • 1/3 cup chopped pecans

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper to prevent the cookies from sticking.
  • Mix the Ingredients: In a large bowl, combine the coconut flakes, chocolate chips, and chopped pecans. Stir to mix them together evenly.
  • Add the Sweetened Condensed Milk: Pour the sweetened condensed milk into the bowl with the dry ingredients. Mix until all ingredients are evenly coated with the condensed milk.
  • Shape the Dough: Using an ice cream scooper or spoon, scoop out the dough and shape it into discs. Gently pat the tops down to flatten them slightly. To prevent the dough from sticking to your hands, rinse your hands frequently or keep a small bowl of water nearby to dampen your fingers as needed.
  • Chill the Dough: For best results and to prevent spreading, refrigerate the dough for 30 minutes to 1 hour before baking.
  • Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges of the coconut start to turn golden brown.
  • Cool the Cookies: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • If you prefer your cookies to be a little chewier, you can reduce the baking time by a couple of minutes.
  • For a richer chocolate flavor, you can use dark chocolate chips instead of semi-sweet chocolate chips.
  • These cookies are perfect for gift-giving or as part of a cookie platter for a party.
  • Keep your hands damp when shaping the cookies to make them easier to handle and to prevent the dough from sticking to your fingers.
