Description

Indulge in the delightful combination of rich chocolate, gooey caramel, and crunchy pecans with these Chocolate Pecan Turtle Clusters. Easy to make and perfect for gifting or sharing, these clusters are a sweet treat that everyone will love!


Ingredients

  • 1 cup pecan halves
  • 1 cup soft caramel candies, unwrapped
  • 2 tablespoons heavy cream
  • 1 cup semi-sweet or milk chocolate chips (or a mix of both)
  • Sea salt, for garnish (optional)

Instructions

  • Prepare a Baking Sheet: Line a baking sheet with parchment paper or a silicone mat to prevent sticking.
  • Arrange the Pecans: Arrange the pecan halves into small clusters of 3-4 pecans each on the baking sheet, making sure they touch in the center.
  • Make the Caramel: In a microwave-safe bowl, combine the caramel candies and heavy cream. Microwave in 15-20 second intervals, stirring after each interval, until smooth and melted (about 1-2 minutes total).
  • Add Caramel to Clusters: Spoon about 1 teaspoon of melted caramel over the center of each pecan cluster, covering where the pecans meet. Let the caramel set for a few minutes to firm up.
  • Melt the Chocolate: In another microwave-safe bowl, melt the chocolate chips in 20-second intervals, stirring in between until smooth and fully melted.
  • Top with Chocolate: Spoon melted chocolate over each caramel pecan cluster, covering the caramel layer. For a more professional look, smooth the chocolate with the back of the spoon.
  • Add Sea Salt (Optional): If desired, sprinkle a pinch of sea salt over the chocolate while it’s still wet.
  • Cool and Set: Let the clusters set at room temperature for about an hour, or refrigerate for 15-20 minutes until the chocolate hardens.
  • Serve: Once set, remove the clusters from the parchment paper and enjoy!
