Ingredients

  • 2 3/4 cups whole milk
  • 1/2 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/8 teaspoon salt
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup semisweet or bittersweet chocolate chips (optional, for extra richness)

Instructions

  1. In a medium saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, and salt until smooth.
  2. Heat the mixture over medium heat, whisking constantly. Once it begins to simmer, continue to whisk for another 2-3 minutes, until the mixture thickens and begins to bubble.
  3. In a separate bowl, lightly beat the egg yolks. Gradually add about 1 cup of the hot chocolate mixture to the egg yolks, whisking constantly to temper the eggs.
  4. Slowly pour the egg mixture back into the saucepan with the remaining chocolate mixture, whisking continuously. Cook the pudding for another 2-3 minutes until it thickens further and reaches a pudding-like consistency.
  5. Remove the saucepan from heat and stir in the butter and vanilla extract until smooth. For an extra decadent pudding, stir in chocolate chips until melted and incorporated.
  6. Pour the pudding into individual serving dishes or a large bowl.
  7. Cover with plastic wrap, pressing the wrap directly onto the surface of the pudding to prevent a skin from forming.
  8. Chill the pudding in the refrigerator for at least 2 hours, or until fully set.
  9. Serve chilled, topped with whipped cream or grated chocolate, if desired.

Notes

  • This pudding can be made ahead of time and stored in the refrigerator for up to 3 days.
  • For a different flavor, you can add a pinch of espresso powder or cinnamon to the cocoa mixture.
