- 1/4 cup cornstarch
- 1/8 teaspoon salt
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1/2 cup semisweet or bittersweet chocolate chips (optional, for extra richness)
Instructions
- In a medium saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, and salt until smooth.
- Heat the mixture over medium heat, whisking constantly. Once it begins to simmer, continue to whisk for another 2-3 minutes, until the mixture thickens and begins to bubble.
- In a separate bowl, lightly beat the egg yolks. Gradually add about 1 cup of the hot chocolate mixture to the egg yolks, whisking constantly to temper the eggs.
- Slowly pour the egg mixture back into the saucepan with the remaining chocolate mixture, whisking continuously. Cook the pudding for another 2-3 minutes until it thickens further and reaches a pudding-like consistency.
- Remove the saucepan from heat and stir in the butter and vanilla extract until smooth. For an extra decadent pudding, stir in chocolate chips until melted and incorporated.
- Pour the pudding into individual serving dishes or a large bowl.
- Cover with plastic wrap, pressing the wrap directly onto the surface of the pudding to prevent a skin from forming.
- Chill the pudding in the refrigerator for at least 2 hours, or until fully set.
- Serve chilled, topped with whipped cream or grated chocolate, if desired.
