Description

Decadent and delightful, these Chocolate Raspberry Mousse Bites are the perfect bite-sized treat for any occasion. With a rich chocolate mousse filling, a sweet raspberry center, and a smooth chocolate coating, they are sure to impress!

  • For the Mousse Filling:
    • 1 cup heavy cream
    • 1/2 cup chocolate chips (milk or dark, depending on preference)
    • 1 teaspoon vanilla extract
    • 1/4 cup powdered sugar
  • For the Raspberry Filling:
    • 1/2 cup raspberry jam or preserves
  • For the Chocolate Coating:
    • 1 1/2 cups melted chocolate chips (for coating)
    • 1 tablespoon coconut oil (optional, for a smoother coating)
  • For Toppings (Optional):
    • Dried rose petals
    • Edible glitter or sugar sprinkles
    • Extra melted chocolate for drizzling

Instructions

  • Make the Chocolate Mousse:
    • In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until fully melted. Set aside to cool slightly.
    • In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form.
    • Gently fold the melted chocolate and vanilla extract into the whipped cream until fully combined and fluffy. Refrigerate the mousse for 30 minutes to firm up.
  • Prepare the Mousse Bites:
    • Take small spoonfuls of the chocolate mousse and form them into small bite-sized discs (you can use a mini silicone mold or form them by hand).
    • Place a small amount of raspberry jam in the center of each mousse disc. Press the top gently to secure the jam. Repeat with the remaining mousse and jam, then freeze the bites for at least 1 hour.
  • Coat the Bites:
    • Melt the chocolate chips (with coconut oil, if using) in a microwave-safe bowl until smooth.
    • Remove the mousse bites from the freezer. Using a fork or dipping tool, dip each frozen mousse bite into the melted chocolate, making sure it’s fully coated. Allow excess chocolate to drip off before placing it on a parchment-lined tray.
  • Decorate and Serve:
    • While the chocolate is still wet, sprinkle the bites with dried rose petals, edible glitter, or sugar sprinkles. You can also drizzle extra melted chocolate on top for added decoration.
    • Allow the bites to set completely at room temperature or in the fridge for about 15 minutes.
