Instructions
- Melt the Peanut Butter Mixture:
In a medium saucepan, melt the peanut butter, honey (or corn syrup), and butter over medium-low heat. Stir frequently until smooth and combined. Remove from heat and stir in the vanilla extract. - Mix with Cereal:
In a large mixing bowl, pour the melted peanut butter mixture over the Rice Krispies cereal. Stir gently until all the cereal is evenly coated. - Form Balls:
Once the mixture cools slightly, use your hands (greased or wet to avoid sticking) to form small balls, about 1 to 1.5 inches in diameter. Place the balls on a baking sheet lined with parchment paper. - Melt Chocolate:
In a microwave-safe bowl, melt the chocolate chips in 20-30 second intervals, stirring in between until fully melted and smooth. - Coat the Balls:
Dip each Rice Krispie ball into the melted chocolate, rolling it around until fully coated. Place the chocolate-covered balls back on the parchment paper. Sprinkle with optional toppings if desired. - Chill and Serve:
Refrigerate the balls for about 30 minutes or until the chocolate sets. Store in an airtight container at room temperature or in the fridge.
