Description

Ingredients

  • 1/2 cup peanut butter (creamy or crunchy)
  • 1/2 cup honey or light corn syrup
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • Optional: Sprinkles or crushed nuts for topping

Instructions

  • Melt the Peanut Butter Mixture:
    In a medium saucepan, melt the peanut butter, honey (or corn syrup), and butter over medium-low heat. Stir frequently until smooth and combined. Remove from heat and stir in the vanilla extract.
  • Mix with Cereal:
    In a large mixing bowl, pour the melted peanut butter mixture over the Rice Krispies cereal. Stir gently until all the cereal is evenly coated.
  • Form Balls:
    Once the mixture cools slightly, use your hands (greased or wet to avoid sticking) to form small balls, about 1 to 1.5 inches in diameter. Place the balls on a baking sheet lined with parchment paper.
  • Melt Chocolate:
    In a microwave-safe bowl, melt the chocolate chips in 20-30 second intervals, stirring in between until fully melted and smooth.
  • Coat the Balls:
    Dip each Rice Krispie ball into the melted chocolate, rolling it around until fully coated. Place the chocolate-covered balls back on the parchment paper. Sprinkle with optional toppings if desired.
  • Chill and Serve:
    Refrigerate the balls for about 30 minutes or until the chocolate sets. Store in an airtight container at room temperature or in the fridge.
