Ingredients
Scale
- 1/2 cup (1 stick) unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1 cup chopped fresh strawberries
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips (for ganache)
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a medium saucepan, melt butter over low heat. Remove from heat and stir in sugar, eggs, and vanilla until smooth.
- Add cocoa powder, flour, salt, and baking powder. Stir until just combined. Pour batter into prepared pan and spread evenly.
- Bake for 20–25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool completely.
- Arrange sliced or chopped strawberries evenly over the cooled brownies.
- In a small saucepan or microwave, heat heavy cream until just simmering. Pour over chocolate chips in a bowl and let sit for 1–2 minutes. Stir until smooth to make ganache.
- Pour ganache over the strawberries and gently spread. Refrigerate for at least 1 hour to set before slicing and serving.
Notes
- Make sure brownies are completely cooled before adding strawberries and ganache.
- Use a serrated knife to slice for cleaner edges.
- Store leftovers in the refrigerator and enjoy within 3 days for best texture.
