- 4 large potatoes, cut into fries

- 8 oz chorizo sausage, casing removed
- 1 cup shredded cheddar cheese
- 2 green onions, sliced
- 1/4 cup sour cream (optional)
- Fresh cilantro, chopped (optional)
Instructions
- Preheat oven to 425°F (220°C). Toss potato fries with olive oil, salt, and pepper.
- Spread fries on a baking sheet in a single layer. Bake for 25-30 minutes, turning halfway through, until crispy and golden.
- While fries bake, cook chorizo in a skillet over medium heat until browned and cooked through. Drain excess fat.
- Remove fries from oven and sprinkle evenly with cooked chorizo and shredded cheddar cheese.
- Return to oven for 5-7 minutes, or until cheese melts.
- Top with sliced green onions, sour cream, and cilantro if desired.
- Serve immediately.
