  • 1 lb chorizo sausage, casing removed
  • 2 cups diced potatoes (peeled, parboiled or pre-cooked)
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (any color)
  • 8 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar or Mexican blend cheese
  • Cooking spray or butter (for greasing dish)
  • Fresh cilantro or green onions, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a skillet over medium heat, cook the chorizo, breaking it apart until browned. Drain excess grease if needed.
  3. Add the diced potatoes, onion, and bell pepper to the skillet. Cook for 5–7 minutes until slightly softened. Remove from heat and let cool slightly.
  4. In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper.
  5. Spread the chorizo and vegetable mixture evenly into the prepared baking dish. Pour the egg mixture over the top.
  6. Sprinkle the shredded cheese evenly over the casserole.
  7. Bake for 30–35 minutes, or until eggs are set and the top is golden and bubbly.
  8. Let rest for 5 minutes before slicing. Garnish with chopped cilantro or green onions if desired, and serve warm.
