These festive bites are a holiday must! A mix of peanut butter, Rice Krispies, and pecans, dipped in rich chocolate and topped with holiday sprinkles. So easy and delicious!
Ingredients
For the Rice Krispie Balls:
• ½ cup peanut butter
• 3 tbsp butter (softened)
• 1 tsp vanilla extract
• 1 cup Rice Krispies cereal
• ½ cup chopped pecans
• 1 cup shredded coconut
For the Chocolate Coating:
• 1 package (about 12 oz) chocolate chips
• 1 square (about 1 oz) sweet chocolate
Instructions
- Mix Ingredients: In a large mixing bowl, combine peanut butter, softened butter, vanilla extract, Rice Krispies cereal, chopped pecans, and shredded coconut. Stir until everything is evenly incorporated. Once mixed, refrigerate for about 30 minutes to firm up.
- Form Balls: After chilling, remove the mixture from the refrigerator. Using your hands, roll the mixture into bite-sized balls, about 1-inch in diameter. For a festive touch, you can roll them in red or green sprinkles at this stage before chilling again.
- Melt Chocolate: In a double boiler, gently melt the chocolate chips and sweet chocolate over low heat. Stir occasionally to ensure smoothness. Once melted, remove the bowl from the heat.
- Coat the Balls: Using a fork, dip each Rice Krispie ball into the melted chocolate, rolling it until fully coated. Place the dipped ball onto a sheet of parchment paper. While the chocolate is still soft, decorate each ball with holiday sprinkles or mini festive decorations.
- Chill and Set: Allow the chocolate coating to set in the fridge for at least 1 hour. For longer storage, place them in the freezer for more extended preservation.
