Description

  • 1/2 cup vegetable oil
  • 2 large eggs

Instructions

  • Preheat the oven to 350Β°F (175Β°C) and grease a 9Γ—5 inch loaf pan.
  • In a large mixing bowl, combine the flour, granulated sugar, brown sugar, baking powder, nutmeg, cinnamon, and salt.
  • In another bowl, whisk together the eggnog, vegetable oil, eggs, and vanilla extract.
  • Pour the wet mixture into the dry ingredients, stirring gently until just combined. If desired, fold in the chopped pecans.
  • Pour the batter into the prepared loaf pan.
  • Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool in the pan for a few minutes before transferring to a wire rack to cool completely before slicing.
