  • 1 package (3 oz) green jello mix (lime)
  • 1 cup hot water (divided)
  • 1 1/2 cups crushed vanilla wafers or graham crackers, divided
  • 1 cup shredded sweetened coconut, divided
  • 1/2 cup powdered sugar (for coating)

Instructions

  • Prepare the Jello Mixtures:
    In two separate bowls, dissolve the red jello mix and green jello mix each with 1/2 cup hot water. Stir until the jello crystals are fully dissolved.
  • Combine the Ingredients:
    Add 3/4 cup of the crushed vanilla wafers and 1/2 cup of shredded coconut to each bowl, stirring until well combined. The mixture should become thick and sticky.
  • Chill the Mixtures:
    Place both bowls in the refrigerator and chill for about 30 minutes to 1 hour, or until the mixtures are firm enough to handle but not fully set.
  • Roll the Balls:
    Once the mixtures are firm, use a spoon to scoop out about a tablespoon of the jello mixture. Roll it between your hands to form a ball. Repeat with the remaining mixtures until all the dough is used up.
  • Coat in Powdered Sugar:
    Roll each jello ball in powdered sugar, giving them a snowy, festive look and helping to reduce stickiness.
  • Serve or Store:
    Arrange the Christmas Jello Balls on a serving platter, or store them in an airtight container in the refrigerator for up to a week.
