- Prepare the Prime Rib: Remove the prime rib from the refrigerator at least 1 hour before cooking to allow it to come to room temperature. This ensures even cooking.
- Preheat the Oven: Preheat your oven to 450°F (230°C).

- Season the Roast: Pat the prime rib dry with paper towels. Rub the herb paste all over the surface of the meat, ensuring it’s evenly coated.
- Roast the Prime Rib: Place the prime rib in a roasting pan, bone-side down. Roast in the preheated oven for 20 minutes at 450°F (230°C), then reduce the temperature to 325°F (165°C). Continue roasting for about 90 minutes, or until a meat thermometer inserted into the thickest part of the roast reads 120°F (49°C) for rare, 130°F (54°C) for medium-rare, or 140°F (60°C) for medium.
- Rest the Meat: Remove the prime rib from the oven and cover loosely with aluminum foil. Let it rest for at least 20 minutes. This step ensures the juices redistribute, making the roast juicy and tender.
- Carve and Serve: After resting, carve the prime rib into slices against the grain. Serve on a platter, optionally garnished with fresh rosemary sprigs.
