  • 1 package refrigerated sugar cookie dough (about 16 oz)
  • 1/4 cup melted butter
  • 1 tablespoon cinnamon
  • 1/2 cup granulated sugar

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
  2. Prepare the cheesecake layer: In a medium-sized bowl, beat together the cream cheese, cookie butter, powdered sugar, and vanilla extract until smooth and creamy. Add the egg and mix until well combined. Set aside.
  3. Prepare the churro bites: Unwrap the sugar cookie dough and break it into small pieces. Press the dough evenly into the bottom of the prepared baking pan, forming a crust layer.
  4. Add the cheesecake layer: Pour the cheesecake and cookie butter mixture over the sugar cookie dough, spreading it evenly to cover the dough.
  5. Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the cheesecake is set and the edges of the cookie dough are golden brown. The center should be slightly firm when touched.
  6. Prepare the churro coating: While the bites are baking, combine the granulated sugar and cinnamon in a small bowl. Once the dessert is done baking, remove it from the oven and let it cool for 10 minutes.
  7. Coat in churro sugar: Brush the top of the baked dessert with the melted butter, then sprinkle the cinnamon-sugar mixture evenly on top.
