- Make the Cinnamon-Sugar Topping: In a small bowl, mix together the granulated sugar and ground cinnamon. Set this mixture aside for sprinkling later.
- Make the Caramel: In a small saucepan, melt the butter and brown sugar over medium heat. Stir constantly as the mixture begins to boil. Once boiling, continue cooking for about 3 minutes until the mixture reaches a deep caramel color and thickens slightly.
- Pour the Caramel Over the Crackers: Carefully pour the hot caramel mixture over the saltine crackers, spreading it evenly with a rubber spatula to cover all the crackers. Be sure to work quickly, as the caramel will begin to set.
- Bake the Toffee: Place the baking sheet in the preheated oven and bake for 5-6 minutes, or until the caramel is bubbly and fully covers the crackers.
- Add the White Chocolate: Remove the pan from the oven and immediately sprinkle the white chocolate chips over the hot toffee. Let the chips sit for about 5 minutes to melt from the heat of the toffee. If needed, return the pan to the oven for 1 minute to help the white chocolate melt.
- Spread the Chocolate and Sprinkle Cinnamon-Sugar: Once the white chocolate has melted, use a spatula to spread it evenly over the caramel layer. While the white chocolate is still wet, generously sprinkle the cinnamon-sugar mixture over the top for that signature churro flavor.
- Cool and Break Into Pieces: Let the toffee cool completely on the baking sheet. For quicker cooling, place the pan in the refrigerator for about 10 minutes. Once set, break the toffee into bite-sized pieces and serve.
