Ingredients

Scale

For the Cilantro-Lime Chicken:

  • 4 boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • Juice of 2 limes
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper, to taste

For the Peach Salsa:

  • 2 ripe peaches, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 small jalapeño, seeds removed and finely chopped (optional, for spice)
  • 1 tablespoon lime juice
  • 1 tablespoon honey (optional, for extra sweetness)
  • Salt and pepper, to taste

For Assembling the Tacos:

  • 8 small soft corn or flour tortillas
  • Extra cilantro leaves for garnish
  • Lime wedges for serving

Instructions

  1. Marinate the Chicken:

    • In a bowl, combine the olive oil, lime juice, cilantro, minced garlic, cumin, chili powder, smoked paprika (if using), salt, and pepper. Stir to combine.
    • Place the chicken breasts or thighs in a resealable bag or shallow dish, pour the marinade over the chicken, and toss to coat evenly. Let it marinate in the fridge for at least 30 minutes, or up to 2 hours for more flavor.
  2. Prepare the Peach Salsa:

    • In a medium bowl, combine the diced peaches, red onion, cilantro, jalapeño (if using), lime juice, and honey. Stir gently to combine, and season with salt and pepper to taste. Set aside.
  3. Cook the Chicken:

    • Heat a grill pan, skillet, or outdoor grill over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C) and is fully cooked.
    • Once cooked, let the chicken rest for a few minutes before slicing it into strips or bite-sized pieces.
  4. Assemble the Tacos:

    • Warm the tortillas in a dry skillet or microwave until soft and pliable.
    • To assemble, add a few pieces of cilantro-lime chicken to each tortilla, then top with a generous spoonful of peach salsa.
    • Garnish with fresh cilantro leaves and serve with lime wedges on the side.
  5. Serve:

    • Serve the tacos immediately with your favorite sides such as rice, beans, or a fresh salad. Enjoy the refreshing blend of flavors!

Notes

  • For a spicier kick, you can add more jalapeño to the salsa or drizzle some hot sauce on top of the tacos.
  • You can swap out the chicken for shrimp or grilled vegetables for a different twist.
  • These tacos are perfect for meal prep – just store the marinated chicken and peach salsa separately and assemble when ready to eat.
