Description

  • Cilantro Lime Grilled Chicken with Strawberry Salsa is a fresh, flavorful dish that combines zesty grilled chicken with a sweet and tangy strawberry salsa. The grilled chicken is marinated with a mix of lime, cilantro, and spices, creating a juicy and aromatic base. The strawberry salsa adds a burst of sweetness with a hint of heat, making this dish a perfect combination of savory, sweet, and refreshing. It’s ideal for a summer dinner or a healthy weeknight meal!

Ingredients

Scale
  • For the Cilantro Lime Grilled Chicken:

    • 4 boneless, skinless chicken breasts

    • 2 tablespoons olive oil

    • 1/4 cup lime juice (about 2 limes)

    • 2 tablespoons chopped fresh cilantro

    • 2 cloves garlic, minced

    • 1 teaspoon ground cumin

    • 1 teaspoon chili powder

    • Salt and pepper, to taste

    For the Strawberry Salsa:

    • 1 1/2 cups fresh strawberries, hulled and diced

    • 1/4 cup red onion, finely diced

    • 1/4 cup fresh cilantro, chopped

    • 1 small jalapeño pepper, seeds removed and finely diced (optional for heat)

    • 1 tablespoon lime juice

    • 1 tablespoon honey (optional, depending on sweetness of strawberries)

    • Salt and pepper, to taste

Instructions

  1. Marinate the Chicken:

    • In a bowl, combine the olive oil, lime juice, cilantro, garlic, cumin, chili powder, salt, and pepper.

    • Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

  2. Prepare the Strawberry Salsa:

    • In a separate bowl, combine the diced strawberries, red onion, cilantro, jalapeño (if using), lime juice, and honey (if using).

    • Season with salt and pepper to taste and gently toss to combine. Set aside in the refrigerator until ready to serve.

  3. Grill the Chicken:

    • Preheat your grill or grill pan over medium-high heat.

    • Remove the chicken from the marinade and discard any excess marinade.

    • Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.

  4. Serve:

    • Slice the grilled chicken and serve it topped with a generous amount of strawberry salsa.

    • You can serve the chicken with a side of rice, quinoa, or a green salad for a complete meal.

Notes

  • For extra flavor, you can add a bit of zest from the limes into the marinade or salsa.

  • If you want to make this dish even more vibrant, try adding avocado slices or a sprinkle of feta cheese on top of the salsa.

  • The salsa can be made ahead of time and stored in the fridge for up to 2 hours before serving.
