For the Bread:
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp salt (reduce to ¼ tsp if using salted butter)
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs, at room temperature
- 1 tsp vanilla extract
- ½ cup whole milk (or 2% milk)
- 1 ½ cups chopped apples (varieties like Honeycrisp, Granny Smith, or Jonagold)
For the Cinnamon Apple Mixture:
- ½ cup light brown sugar
- 1 tsp ground cinnamon
For the Cinnamon Sugar Topping:
- 2 tbsp light brown sugar
- ½ tsp ground cinnamon
For the Glaze:
- ½ cup confectioner’s sugar
- 1–2 tbsp milk
- ¼ tsp cinnamon (optional)
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C). Grease and flour an 8.5 x 4.5-inch loaf pan.
- Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
- Mix Wet Ingredients: In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined. Do not overmix.
- Add Apples and Cinnamon Mixture: In a separate bowl, combine the brown sugar and cinnamon. Fold in 1 cup of the chopped apples into the batter, then pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon apple mixture over the batter, then add the remaining batter and top with the rest of the cinnamon apples.
- Top with Cinnamon Sugar: In a small bowl, combine the topping ingredients (brown sugar and cinnamon) and sprinkle over the top of the batter.
- Bake: Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare Glaze: In a small bowl, whisk together the confectioner’s sugar, milk, and cinnamon until smooth. Adjust the milk for desired consistency.
- Glaze and Serve: Drizzle the glaze over the cooled bread, slice, and serve.
