    • 2 tablespoons heavy cream or milk

    • Pinch of salt


Instructions

  • Preheat the Oven:

    • Preheat your oven to 350°F (175°C).

    • Line two baking sheets with parchment paper or silicone baking mats.

  • Make the Oatmeal Cookie Dough:

    • In a medium bowl, whisk together the flour, cinnamon, baking soda, and salt. Set aside.

    • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).

    • Beat in the egg and vanilla extract until fully combined.

    • Gradually add the dry ingredients to the wet ingredients and mix until just combined.

    • Stir in the oats, dried apples, and raisins (if using).

  • Form the Cookies:

    • Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

    • Flatten the dough slightly with the back of a spoon to form cookie rounds.

  • Bake the Cookies:

  • Make the Cream Filling:

  • Assemble the Cream Pies:

    • Once the cookies have cooled completely, spread a generous amount of cream filling on the bottom of one cookie.

    • Top with a second cookie to form a sandwich. Repeat with the remaining cookies and cream filling.
