Instructions

  • Prepare the apples:
    Preheat your oven to 350°F (175°C). Slice the top off each apple and use a spoon or melon baller to scoop out the core, leaving about 1/2 inch of apple around the edges. Place the apples in a baking dish.
  • Make the oatmeal filling:
    In a medium saucepan, combine the rolled oats, applesauce, maple syrup (or honey), ground cinnamon, nutmeg, vanilla extract, and a pinch of salt. Add the water or apple juice and bring the mixture to a simmer over medium heat. Stir occasionally and cook for about 5 minutes, until the oats are soft and the mixture is thickened. Remove from heat.
  • Stuff the apples:
    Spoon the oatmeal mixture into the hollowed-out apples, packing the filling in tightly. If desired, stir in the chopped walnuts or pecans and raisins or cranberries into the oatmeal filling before stuffing the apples.
  • Bake the apples:
    Top each stuffed apple with a small pat of butter. Cover the baking dish with aluminum foil and bake in the preheated oven for 30-35 minutes, or until the apples are tender and the filling is bubbling.
