Ingredients
Scale
- 4 medium apples (Granny Smith or Honeycrisp work well)
- 1 cup old-fashioned rolled oats
- 1/2 cup unsweetened applesauce
- 1/4 cup chopped walnuts or pecans (optional)
- 1/4 cup raisins or dried cranberries (optional)
- 2 tablespoons maple syrup or honey
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup water (or apple juice for extra sweetness)
- 1 tablespoon butter (or vegan butter for a dairy-free version)
- Additional cinnamon and sugar for topping (optional)
Instructions
- Prepare the apples:
Preheat your oven to 350°F (175°C). Slice the top off each apple and use a spoon or melon baller to scoop out the core, leaving about 1/2 inch of apple around the edges. Place the apples in a baking dish. - Make the oatmeal filling:
In a medium saucepan, combine the rolled oats, applesauce, maple syrup (or honey), ground cinnamon, nutmeg, vanilla extract, and a pinch of salt. Add the water or apple juice and bring the mixture to a simmer over medium heat. Stir occasionally and cook for about 5 minutes, until the oats are soft and the mixture is thickened. Remove from heat. - Stuff the apples:
Spoon the oatmeal mixture into the hollowed-out apples, packing the filling in tightly. If desired, stir in the chopped walnuts or pecans and raisins or cranberries into the oatmeal filling before stuffing the apples. - Bake the apples:
Top each stuffed apple with a small pat of butter. Cover the baking dish with aluminum foil and bake in the preheated oven for 30-35 minutes, or until the apples are tender and the filling is bubbling. - Serve:
Once the apples are baked, remove them from the oven and let them cool for a few minutes. Optional: Sprinkle additional cinnamon and sugar on top before serving for extra sweetness. - Enjoy:
Serve the cinnamon oatmeal stuffed apples warm, as a delicious dessert, breakfast, or snack.
