Description

  • 3 3/4 cups sugar
  • 1 1/4 cups light corn syrup
  • 1 tsp red food coloring
  • 12 tsp cinnamon oil (adjust for spice level)
  • 1 1/2 cups powdered sugar
  • Butter for greasing the pan

Instructions

  • Prepare the Pan: Butter a 15x10x1-inch sheet cake pan, line it with parchment paper, and butter the parchment paper well.
  • Make the Candy Base: In a large saucepan, mix water, sugar, corn syrup, and red food coloring. Stir over medium-high heat until the sugar starts to dissolve.
  • Heat to Hard Crack Stage: Attach a candy thermometer to the pan. Bring the mixture to a boil and heat until it reaches 300°F (hard crack stage). This should take about 20 minutes. If it rises too close to the edge of the pan, briefly remove it from heat to prevent overflow.
  • Add Cinnamon: Once the mixture reaches 300°F, remove it from heat and carefully stir in the cinnamon oil (be cautious, as cinnamon oil is very strong). Quickly pour the mixture into the prepared pan and let it cool for at least 4 hours.
  • Break and Dust: After cooling, dust the top of the candy with powdered sugar. Flip the candy onto a cutting board, peel off the parchment paper, and use a knife to break it into bite-sized pieces. Dust with more powdered sugar if desired.
  • Store: Keep the cinnamon rock candy in an airtight container to maintain its freshness.
