For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- ½ cup unsalted butter, melted
For the Cinnamon Swirl Filling:
- ½ cup unsalted butter, melted
- ¾ cup brown sugar
- 2 tablespoons ground cinnamon
For the Cheesecake Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
For the Frosting:
- 1 cup powdered sugar
- 4 oz cream cheese, softened
- 2 tablespoons unsalted butter, softened
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (to reach the desired consistency)
Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C). Grease and line an 8×8 or 9×9-inch baking pan with parchment paper.
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form an even layer.
- Bake for 8-10 minutes, then set aside to cool.
- Prepare the Cinnamon Swirl Filling:
- In a small bowl, mix the melted butter, brown sugar, and cinnamon until smooth. Set aside.
- Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
- Add in the eggs, one at a time, beating well after each addition.
- Mix in the vanilla extract and sour cream until fully combined.
- Assemble the Cinnamon Roll Cheesecake:
- Pour half of the cheesecake filling over the pre-baked crust.
- Drizzle half of the cinnamon swirl filling over the cheesecake layer and gently swirl it through with a knife or toothpick.
- Pour the remaining cheesecake batter on top, followed by the remaining cinnamon swirl. Again, use a knife to create a marbled effect.
- Bake:
- Bake for 35-40 minutes, or until the center is set and only slightly jiggly.
- Prepare the Frosting:
- While the cheesecake cools, make the frosting by beating together the cream cheese, powdered sugar, butter, vanilla extract, and milk until smooth.
- Once the cheesecake has cooled, pipe or spread the frosting on top of the bars in a decorative swirl pattern.
- Chill and Serve:
- Refrigerate the cheesecake for at least 4 hours or overnight to let it set fully.
- Once chilled, slice into squares, and serve with an extra drizzle of cinnamon swirl or caramel if desired.
