Description

These decadent Cinnamon Roll Cheesecake Bars combine the comforting flavors of cinnamon rolls with a rich, creamy cheesecake filling, all topped with a luscious frosting. Perfect for dessert lovers, they are ideal for sharing at gatherings or enjoying as a sweet treat.

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup unsalted butter, melted

For the Cinnamon Swirl Filling:

  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 2 tablespoons ground cinnamon

For the Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream

For the Frosting:

  • 1 cup powdered sugar
  • 4 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (to reach the desired consistency)

Instructions

  • Prepare the Crust:
    • Preheat your oven to 350°F (175°C). Grease and line an 8×8 or 9×9-inch baking pan with parchment paper.
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form an even layer.
    • Bake for 8-10 minutes, then set aside to cool.
  • Prepare the Cinnamon Swirl Filling:
    • In a small bowl, mix the melted butter, brown sugar, and cinnamon until smooth. Set aside.
  • Make the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
    • Add in the eggs, one at a time, beating well after each addition.
    • Mix in the vanilla extract and sour cream until fully combined.
  • Assemble the Cinnamon Roll Cheesecake:
    • Pour half of the cheesecake filling over the pre-baked crust.
    • Drizzle half of the cinnamon swirl filling over the cheesecake layer and gently swirl it through with a knife or toothpick.
    • Pour the remaining cheesecake batter on top, followed by the remaining cinnamon swirl. Again, use a knife to create a marbled effect.
  • Bake:
    • Bake for 35-40 minutes, or until the center is set and only slightly jiggly.
  • Prepare the Frosting:
    • While the cheesecake cools, make the frosting by beating together the cream cheese, powdered sugar, butter, vanilla extract, and milk until smooth.
    • Once the cheesecake has cooled, pipe or spread the frosting on top of the bars in a decorative swirl pattern.
  • Chill and Serve:
    • Refrigerate the cheesecake for at least 4 hours or overnight to let it set fully.
    • Once chilled, slice into squares, and serve with an extra drizzle of cinnamon swirl or caramel if desired.
