With layers of cake soaked in cinnamon sugar goodness, topped with a sweet glaze, it’s an irresistible treat that’s perfect for breakfast, dessert, or any special occasion. It’s easy to make and sure to impress with its gooey, cinnamon-sweet flavor!

Ingredients

Scale

For the cake:

  • 1 box (15.25 oz) yellow cake mix (or vanilla cake mix)
  • 1 cup water
  • 3 large eggs
  • 1/3 cup vegetable oil

For the cinnamon swirl:

  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon

For the glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Cake:

    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
    • In a large bowl, mix the yellow cake mix, water, eggs, and vegetable oil. Beat until smooth and fully combined, following the instructions on the cake mix box.
    • Pour the cake batter into the prepared baking dish, spreading it out evenly.
  2. Make the Cinnamon Swirl:

    • In a small bowl, mix together the brown sugar and cinnamon.
    • Spoon the cinnamon mixture over the top of the cake batter in random dollops.
  3. Swirl the Cinnamon into the Cake:

    • Use a knife or skewer to gently swirl the cinnamon sugar mixture into the cake batter. Do this by dragging the knife or skewer in a swirling motion throughout the batter, creating a marbled effect.
  4. Bake the Cake:

    • Bake the cake in the preheated oven for 28-32 minutes, or until a toothpick inserted into the center of the cake comes out clean.
    • Let the cake cool for about 15 minutes.
  5. Poke the Cake:

    • Once the cake has cooled slightly, use the end of a wooden spoon or a skewer to poke holes all over the cake, making sure to go all the way down into the cake but not through the bottom.
  6. Add the Glaze:

    • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make the glaze. The glaze should be smooth and pourable.
    • Pour the glaze over the top of the cake, allowing it to sink into the holes and soak into the cinnamon swirls.
  7. Serve:

    • Let the cake cool completely before serving, allowing the glaze to set. Slice and enjoy!

Notes

  • This cake is delicious served warm or at room temperature, and it pairs perfectly with a cup of coffee or a glass of milk.
  • You can add a cream cheese glaze or frosting for a richer topping if you want to elevate the sweetness.
  • If you prefer a stronger cinnamon flavor, you can increase the amount of cinnamon in the swirl.
  • For an extra treat, top the cake with whipped cream or a scoop of vanilla ice cream before serving.
