Ingredients

Scale
  • For the Cookies:
    • 2 1/4 cups all-purpose flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon baking soda
    • 1/2 teaspoon salt
    • 3/4 cup unsalted butter, softened
    • 3/4 cup granulated sugar
    • 1 large egg
    • 2 teaspoons vanilla extract
    • 1 tablespoon milk
  • For the Cinnamon Filling:
    • 1/4 cup unsalted butter, melted
    • 1/4 cup brown sugar
    • 1 tablespoon ground cinnamon
  • For the Glaze:
    • 1 cup powdered sugar
    • 2 tablespoons milk
    • 1/2 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
  • Beat in the egg, vanilla extract, and milk until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Roll out the dough into a rectangle about 1/4-inch thick.
  • Brush the melted butter over the dough and sprinkle evenly with the brown sugar and cinnamon.
  • Starting from one end, roll the dough tightly into a log. Slice into 1/2-inch thick rounds.
  • Place the slices onto the prepared baking sheet, about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  • For the glaze, whisk together the powdered sugar, milk, and vanilla. Drizzle over the cooled cookies.

Notes

  • Store cookies in an airtight container for up to a week.
  • For a richer flavor, consider adding a pinch of nutmeg to the cinnamon filling.
