Description

These melt-in-your-mouth Cinnamon Sugar Snowball Cookies are buttery, nutty (optional), and coated in a warm, sweet cinnamon sugar layer. Perfect for the holidays or anytime you need a cozy treat!

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

  • 1/2 cup finely chopped pecans or walnuts (optional)

For the Cinnamon Sugar Coating:

 

  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Make the Cookie Dough:
    • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
    • In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
    • Mix in the vanilla extract.
    • Gradually add the flour, salt, and ground cinnamon, mixing until a soft dough forms.
    • If using, fold in the chopped pecans or walnuts.
  • Shape the Cookies:
    • Scoop and roll the dough into 1-inch balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  • Bake the Cookies:
    • Bake in the preheated oven for 12-14 minutes, or until the bottoms are lightly golden.
    • Let the cookies cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool slightly.
  • Coat in Cinnamon Sugar:
    • In a small bowl, combine the granulated sugar and ground cinnamon.
    • While the cookies are still warm, gently roll them in the cinnamon sugar mixture until fully coated.

Notes

  • Double Coating: For extra sweetness, roll the cookies in the cinnamon sugar again once they’ve completely cooled.
  • Storage: Store in an airtight container at room temperature for up to 1 week.
  • Freezing: Freeze uncoated cookies for up to 3 months. Thaw and coat in cinnamon sugar before serving.
