Ingredients

Scale

For the Apple Fritter Bread:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1 1/2 cups peeled and diced apples (about 2 medium apples, preferably a tart variety like Granny Smith)

For the Cinnamon Swirl:

  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

For the Glaze:

  • 1/2 cup powdered sugar
  • 2 teaspoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.
  3. Cream the butter and sugar: In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Alternate adding dry ingredients and milk: Add the flour mixture in three parts, alternating with the milk, beginning and ending with the flour mixture. Mix just until combined.
  5. Add the apples: Gently fold in the diced apples into the batter.
  6. Make the cinnamon swirl: In a small bowl, combine the granulated sugar and ground cinnamon.
  7. Assemble the bread: Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture evenly over the batter. Add the remaining batter on top and swirl the cinnamon-sugar mixture into the batter with a knife or skewer.
  8. Bake: Bake the bread for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover the bread with aluminum foil during the last 15 minutes of baking.
  9. Prepare the glaze: While the bread is baking, make the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl.
  10. Cool and glaze: Once the bread is done baking, allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Drizzle the glaze over the cooled bread before slicing and serving.
  11. Serve: Slice the bread and enjoy the sweet, cinnamon swirl apple goodness!

Notes

  • For a softer texture, use a milder apple like Fuji or Honeycrisp instead of Granny Smith.
  • You can add a little more cinnamon or nutmeg to the batter if you love a spicier kick.
  • Make sure to not overmix the batter once you add the dry ingredients to ensure a light and airy bread.
  • If you prefer a chunkier bread, leave some of the apples in larger pieces.
