Ingredients
Scale
For the Apple Fritter Bread:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- 1 1/2 cups peeled and diced apples (about 2 medium apples, preferably a tart variety like Granny Smith)
For the Cinnamon Swirl:
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
For the Glaze:
- 1/2 cup powdered sugar
- 2 teaspoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.
- Cream the butter and sugar: In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Alternate adding dry ingredients and milk: Add the flour mixture in three parts, alternating with the milk, beginning and ending with the flour mixture. Mix just until combined.
- Add the apples: Gently fold in the diced apples into the batter.
- Make the cinnamon swirl: In a small bowl, combine the granulated sugar and ground cinnamon.
- Assemble the bread: Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture evenly over the batter. Add the remaining batter on top and swirl the cinnamon-sugar mixture into the batter with a knife or skewer.
- Bake: Bake the bread for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover the bread with aluminum foil during the last 15 minutes of baking.
- Prepare the glaze: While the bread is baking, make the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl.
- Cool and glaze: Once the bread is done baking, allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Drizzle the glaze over the cooled bread before slicing and serving.
- Serve: Slice the bread and enjoy the sweet, cinnamon swirl apple goodness!
Notes
- For a softer texture, use a milder apple like Fuji or Honeycrisp instead of Granny Smith.
- You can add a little more cinnamon or nutmeg to the batter if you love a spicier kick.
- Make sure to not overmix the batter once you add the dry ingredients to ensure a light and airy bread.
- If you prefer a chunkier bread, leave some of the apples in larger pieces.
