Description

  • This Cinnamon Toast Crunch Bread is a sweet, moist loaf inspired by your favorite cereal. With the perfect blend of cinnamon and sugar, this bread is soft, flavorful, and incredibly indulgent. It’s perfect for breakfast, brunch, or as a treat to enjoy with a cup of coffee. Each bite is like a cinnamon roll in loaf form!

Ingredients

Scale
  • For the Bread:

    • 1 1/2 cups all-purpose flour

    • 1 teaspoon baking powder

    • 1/2 teaspoon salt

    • 1/2 teaspoon ground cinnamon

    • 1/2 cup unsalted butter, softened

    • 1 cup granulated sugar

    • 2 large eggs

    • 1 teaspoon vanilla extract

    • 1/2 cup whole milk

    • 1 1/2 cups Cinnamon Toast Crunch cereal, crushed

    For the Cinnamon-Sugar Topping:

    • 1/4 cup granulated sugar

    • 1 tablespoon ground cinnamon

    • 1/4 cup Cinnamon Toast Crunch cereal, crushed (optional, for extra crunch)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

  2. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.

  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.

  6. Gently fold in the crushed Cinnamon Toast Crunch cereal.

  7. Pour the batter into the prepared loaf pan and smooth the top.

  8. In a small bowl, mix together the cinnamon and sugar for the topping. Sprinkle the mixture evenly over the top of the batter.

  9. Optional: Add extra crushed Cinnamon Toast Crunch cereal over the top for an added crunch.

  10. Bake for 55-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.

  11. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • This bread is best served warm or at room temperature.

  • You can freeze this bread for up to 2 months—just wrap it tightly in plastic wrap and foil, then thaw before serving.

  • For added flavor, you can drizzle a simple glaze (powdered sugar and milk) over the top once it’s cooled.

  • If you like extra cinnamon flavor, you can increase the cinnamon in the bread batter or topping.
