Ingredients
-
For the Bread:
-
1 1/2 cups all-purpose flour
-
1 teaspoon baking powder
-
1/2 teaspoon salt
-
1/2 teaspoon ground cinnamon
-
1/2 cup unsalted butter, softened
-
1 cup granulated sugar
-
2 large eggs
-
1 teaspoon vanilla extract
-
1/2 cup whole milk
-
1 1/2 cups Cinnamon Toast Crunch cereal, crushed
For the Cinnamon-Sugar Topping:
-
1/4 cup granulated sugar
-
1 tablespoon ground cinnamon
-
1/4 cup Cinnamon Toast Crunch cereal, crushed (optional, for extra crunch)
-
Instructions
-
Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
-
In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.
-
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
-
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
-
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
-
Gently fold in the crushed Cinnamon Toast Crunch cereal.
-
Pour the batter into the prepared loaf pan and smooth the top.
-
In a small bowl, mix together the cinnamon and sugar for the topping. Sprinkle the mixture evenly over the top of the batter.
-
Optional: Add extra crushed Cinnamon Toast Crunch cereal over the top for an added crunch.
-
Bake for 55-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
-
Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
-
This bread is best served warm or at room temperature.
-
You can freeze this bread for up to 2 months—just wrap it tightly in plastic wrap and foil, then thaw before serving.
-
For added flavor, you can drizzle a simple glaze (powdered sugar and milk) over the top once it’s cooled.
-
If you like extra cinnamon flavor, you can increase the cinnamon in the bread batter or topping.
