- 1½ pounds 93% lean ground turkey
- 1 cup chopped fresh button mushrooms
- 1 cup chopped fresh spinach leaves
- ½ cup shredded carrots
- 2 tablespoons Citrus Herb Seasoning
- 1 teaspoon Ultimate Steak™ Seasoning
- 3 tablespoons cold water
- 1 tablespoon cornstarch
- 18 bibb lettuce or butter lettuce leaves
- 1½ ripe avocados, pitted, peeled, and diced
- 1 medium tomato, diced
Instructions
- Cook Turkey Mixture: In a large skillet, heat the olive oil over medium-high heat. Add the ground turkey, mushrooms, spinach, carrots, Citrus Herb Seasoning, and Ultimate Steak Seasoning. Cook, breaking up the turkey, until it is no longer pink, about 5-6 minutes.
- Thicken Mixture: In a small bowl, whisk together the cold water and cornstarch. Stir this mixture into the skillet, tossing to coat the turkey and veggies evenly. Remove from heat.
- Assemble Wraps: Spoon the turkey mixture into lettuce leaves. Top with diced avocado and tomato.
Notes
- For a paleo-friendly version, substitute arrowroot powder for cornstarch.
- Combine the turkey and vegetables in a freezer bag and freeze for make-ahead convenience. Thaw completely before cooking.
