Ingredients

- 1 lb beef chuck, cut into cubes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 carrots, sliced
- 1 cup mushrooms, sliced
- 1 tbsp tomato paste
- 2 tsp thyme
- Salt & pepper to taste
- 2 tbsp flour
Instructions
- Brown the beef in a pot with salt and pepper. Remove and set aside.
- In the same pot, sauté onions and garlic until soft.
- Stir in tomato paste, thyme, and flour. Cook for 1 minute.
- Deglaze the pot with red wine, then add beef broth. Return the beef to the pot.
- Add carrots and mushrooms, cover, and simmer for 2 hours until the beef is tender.
- Serve hot, garnished with fresh parsley.
Notes
For added flavor, consider marinating the beef in the wine for a few hours before cooking.
