Description

Pizzelle are traditional Italian waffle cookies, thin and crisp, with a delicate flavor. These delicious treats are perfect for any occasion, from holidays to everyday snacking. Enjoy them plain or with a dusting of powdered sugar, or get creative and fill them with chocolate, whipped cream, or mascarpone for an extra indulgence!

Ingredients

Scale
  • 3 large Eggs
  • 3/4 cup Granulated Sugar
  • 1/2 cup Unsalted Butter, melted
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Anise Extract (or use almond extract for a different flavor)
  • 1 3/4 cups All-Purpose Flour
  • 1 1/2 teaspoons Baking Powder
  • Pinch of Salt
  • Powdered Sugar, for dusting (optional)

Instructions

  1. Preheat the Pizzelle Iron: Preheat your pizzelle iron according to the manufacturer’s instructions. If you don’t have a pizzelle iron, you can use a waffle maker as an alternative.
  2. Mix the Wet Ingredients: In a medium bowl, whisk together the eggs and granulated sugar until light and frothy. Add the melted butter, vanilla extract, and anise extract (or almond extract). Stir until well combined.
  3. Add the Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms.
  4. Cook the Pizzelle: Lightly grease the pizzelle iron with cooking spray or brush with melted butter. Spoon about 1 tablespoon of the batter onto the center of the pizzelle iron (or more, depending on the size of your iron). Close the lid and cook according to the manufacturer’s instructions, usually about 30 seconds to 1 minute, until golden brown.
  5. Cool the Pizzelle: Carefully remove the pizzelle from the iron and allow them to cool on a wire rack. They will crisp up as they cool. If desired, dust with powdered sugar before serving.
  6. Serve: Once cooled, enjoy the pizzelle on their own or as a base for various fillings, such as whipped cream, mascarpone, or chocolate.

Notes

  • Pizzelle are best enjoyed within a few days of baking, but they can be stored in an airtight container for up to a week.
  • You can experiment with different flavor extracts such as almond, lemon, or hazelnut.
  • If you want to make pizzelle sandwiches, spread a layer of Nutella or whipped cream between two pizzelle for a sweet treat.
  • These cookies can also be shaped into cones when fresh and warm for an elegant presentation and filled with ice cream or sweet cream.
