Ingredients

  • 3 lbs beef chuck roast
  • 1 onion, chopped
  • 4 carrots, sliced
  • 4 potatoes, sliced or quartered
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Season the beef chuck roast generously with salt, pepper, and garlic powder.
  2. Place the chopped onion, sliced carrots, and diced potatoes at the bottom of the slow cooker.
  3. Place the seasoned beef on top of the vegetables.
  4. Pour the beef broth and Worcestershire sauce over the beef.
  5. Cover and cook on low for 8 hours, or until the beef is tender.
  6. Serve the pot roast with the vegetables and gravy.

Notes

  • For a richer flavor, you can sear the beef chuck roast in a hot pan before adding it to the slow cooker.
  • You can substitute the potatoes with parsnips or sweet potatoes for a different twist.
  • If you like thicker gravy, you can make a slurry with cornstarch and water and stir it into the cooking liquid during the last 30 minutes.
