Description

This refreshing and tangy Southern Lemon Icebox Pie is the ultimate summer dessert. With a smooth, creamy lemon filling in a buttery graham cracker crust, it’s a sweet and easy treat that will become a family favorite!

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lemon juice (about 34 lemons)
  • 1 tablespoon lemon zest
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • Fresh lemon slices (optional, for garnish)

Instructions

  1. Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and granulated sugar. Stir in the melted butter until the mixture resembles wet sand. Press the mixture into the bottom of a 9-inch pie dish to form a crust. Bake for 8-10 minutes, then remove from the oven and let it cool.
  2. Make the Filling: In a large bowl, whisk together the sweetened condensed milk, fresh lemon juice, and lemon zest until smooth and well combined.
  3. Whip the Cream: In a separate mixing bowl, beat the heavy whipping cream and powdered sugar with an electric mixer until soft peaks form. Gently fold the whipped cream into the lemon mixture until combined.
  4. Assemble the Pie: Pour the lemon filling into the cooled graham cracker crust and smooth the top with a spatula.
  5. Chill: Refrigerate the pie for at least 4 hours, or overnight, until the filling is set.
  6. Serve: Garnish with fresh lemon slices or a dollop of whipped cream, if desired. Serve chilled and enjoy!

Notes

  • This pie is best when it’s made ahead and allowed to chill in the fridge for several hours.
  • You can substitute the graham cracker crust with a store-bought one to save time.
  • For a more intense lemon flavor, add extra lemon zest to the filling.
