  • 1 tablespoon honey (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder (optional, for fluffier bread)

Instructions

  1. Preheat the oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Whisk the egg whites: In a clean, dry bowl, beat the egg whites and cream of tartar with an electric mixer until stiff peaks form. This should take about 3-5 minutes.
  3. Mix the egg yolks: In another bowl, whisk together the egg yolks, softened cream cheese, honey (if using), salt, and baking powder (if using). Mix until smooth and fully combined.
  4. Combine the egg whites and yolk mixture: Gently fold the whipped egg whites into the egg yolk mixture, being careful not to deflate the egg whites. Fold until fully incorporated.
  5. Shape the bread: Using a spoon or a spatula, drop spoonfuls of the batter onto the prepared baking sheet, shaping them into rounds or oval shapes about 3 inches in diameter. You should have about 6-8 pieces.
  6. Bake: Bake the cloud bread for 25-30 minutes, or until golden brown and firm to the touch. If the bread starts to brown too quickly, cover it loosely with foil.
  7. Cool and serve: Let the cloud bread cool completely on a wire rack before serving. Enjoy as a sandwich base or on its own with your favorite spreads.
