- 3 oz (85g) cream cheese, softened
- 1/4 teaspoon cream of tartar
- 1 tablespoon honey (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder (optional, for fluffier bread)
Instructions
- Preheat the oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Whisk the egg whites: In a clean, dry bowl, beat the egg whites and cream of tartar with an electric mixer until stiff peaks form. This should take about 3-5 minutes.
- Mix the egg yolks: In another bowl, whisk together the egg yolks, softened cream cheese, honey (if using), salt, and baking powder (if using). Mix until smooth and fully combined.
- Combine the egg whites and yolk mixture: Gently fold the whipped egg whites into the egg yolk mixture, being careful not to deflate the egg whites. Fold until fully incorporated.
- Shape the bread: Using a spoon or a spatula, drop spoonfuls of the batter onto the prepared baking sheet, shaping them into rounds or oval shapes about 3 inches in diameter. You should have about 6-8 pieces.
- Bake: Bake the cloud bread for 25-30 minutes, or until golden brown and firm to the touch. If the bread starts to brown too quickly, cover it loosely with foil.
- Cool and serve: Let the cloud bread cool completely on a wire rack before serving. Enjoy as a sandwich base or on its own with your favorite spreads.
