Description

This Coconut Lavender Lemonade Mocktail is a refreshing and calming drink that blends the tropical flavor of coconut with the soothing floral notes of lavender and the tartness of lemon. It’s a perfect non-alcoholic beverage for a warm day or to serve at parties, offering a sophisticated twist on classic lemonade.

Ingredients

Scale
  • 1/2 cup fresh squeezed lemon juice (about 45 lemons)
  • 1 tablespoon dried culinary lavender
  • 1/4 cup honey or agave syrup (or to taste)
  • 1 cup coconut water
  • 2 cups cold water
  • Ice cubes
  • Fresh lavender sprigs (for garnish, optional)
  • Thin lemon slices (for garnish, optional)

Instructions

  1. In a small saucepan, combine 1/2 cup of water with the dried lavender. Heat over medium heat until it begins to simmer, then remove from heat and let it steep for 5-10 minutes, depending on how strong you like the lavender flavor.
  2. Strain the lavender infusion into a separate container, discarding the lavender buds.
  3. In a large pitcher, combine the fresh lemon juice, lavender infusion, coconut water, cold water, and honey or agave syrup. Stir well to combine. Adjust sweetness to taste by adding more honey or syrup if desired.
  4. Fill glasses with ice cubes and pour the coconut lavender lemonade over the ice.
  5. Garnish with fresh lavender sprigs and thin lemon slices for an elegant touch.
  6. Serve immediately and enjoy this refreshing, floral mocktail!

Notes

  • For a stronger lavender flavor, steep the lavender buds for longer, or increase the amount of lavender.
  • Adjust the sweetness to your liking, depending on the tartness of the lemons you use.
  • If you don’t have coconut water, you can use plain water or sparkling water for a different twist.
  • For a fizzy version, replace the cold water with sparkling water or club soda.
