  • 2 cans (13.5 oz each) full-fat coconut milk

  • 3/4 cup granulated sugar (or sweetener of your choice)

  • 1 tablespoon vanilla extract

  • 1/4 teaspoon salt

  • Optional mix-ins: chocolate chips, shredded coconut, chopped fruit, etc.


Instructions

  • Prepare the Coconut Milk Mixture:

    • In a medium bowl, whisk together the coconut milk, sugar, vanilla extract, and salt until the sugar is completely dissolved. If you prefer a sweeter ice cream, you can add more sugar to taste.

  • Chill the Mixture:

    • For the best texture, place the coconut milk mixture in the refrigerator for at least 2 hours or until chilled thoroughly. This helps the ice cream base freeze faster and results in a creamier texture.

  • Churn the Ice Cream:

    • Pour the chilled coconut milk mixture into an ice cream maker, following the manufacturer’s instructions. Typically, it will take about 20-25 minutes to churn the mixture into a soft-serve consistency.

    • If you’re adding any mix-ins (chocolate chips, shredded coconut, etc.), add them during the last 5 minutes of churning.

  • Freeze the Ice Cream:

    • Transfer the ice cream to an airtight container and smooth the top with a spatula. Freeze for at least 4 hours, or until it is firm and scoopable.

  • Serve:

    • Once frozen, scoop and serve your creamy, tropical coconut milk ice cream. Garnish with extra shredded coconut or fruit for a fun twist.

Notes

  • If you don’t have an ice cream maker, you can also pour the mixture into a shallow dish and freeze, stirring every 30 minutes until it reaches the desired consistency. This method will take longer to freeze and may have a slightly less creamy texture.

 

  • You can customize the flavor by adding cocoa powder for chocolate coconut ice cream, or mixing in a few teaspoons of fruit puree for a fruity variation.
