Description

This Cod in Roasted Red Pepper Sauce is a flavorful and healthy dish featuring delicate, flaky cod fillets simmered in a rich, creamy roasted red pepper sauce. The combination of the smoky sweetness of roasted red peppers and the mild cod creates a perfectly balanced, comforting meal. This dish is great served with rice, pasta, or roasted vegetables for a complete meal.

Ingredients

Scale

For the Cod:

  • 4 cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon paprika (optional, for extra flavor)

For the Roasted Red Pepper Sauce:

  • 2 roasted red peppers (jarred or homemade)
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream or coconut cream for a dairy-free version
  • 1/4 cup chicken broth or vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Cod:
Pat the cod fillets dry with paper towels and season with salt, pepper, and paprika (if using).
  2. Cook the Cod:
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the cod fillets and cook for 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove the fillets from the skillet and set aside.
  3. Make the Roasted Red Pepper Sauce:
In the same skillet, add 1 tablespoon of olive oil. Sauté the chopped onion and minced garlic for 2-3 minutes, or until softened and fragrant. Add the roasted red peppers, smoked paprika, and oregano, and cook for another 2 minutes.
  4. Blend the Sauce:
Transfer the onion, garlic, and roasted red pepper mixture to a blender or use an immersion blender in the skillet. Blend until smooth. Return the sauce to the skillet.
  5. Finish the Sauce:
Add the heavy cream (or coconut cream) and broth to the sauce. Stir to combine and bring to a simmer. Let the sauce cook for 3-4 minutes until slightly thickened. Taste and adjust the seasoning with salt and pepper as needed.
  6. Combine Cod and Sauce:
Return the cooked cod fillets to the skillet, spooning some of the sauce over the top of the fish. Let the cod simmer in the sauce for 2-3 minutes to absorb the flavors.
  7. Serve:
Garnish with fresh parsley and serve the cod with your choice of sides, such as rice, pasta, or steamed vegetables.

Notes

  • You can use any white fish fillet, such as halibut or tilapia, in place of cod.
  • For a more intense flavor, try adding a squeeze of lemon juice to the sauce just before serving.
  • If you prefer a spicier sauce, add a pinch of red pepper flakes to the roasted red pepper mixture.
