Description

Ingredients

  • 2 tbsp olive oil
  • 2 garlic cloves, chopped
  • 1 onion, sliced
  • 2 large tomatoes, diced
  • Fresh parsley, chopped
  • Fresh thyme, chopped
  • Red pepper flakes (to taste)
  • Salt and pepper (to taste)
  • 1520 black olives
  • 1015 capers
  • 4 cod loins
  • Lemon juice (to taste)

Instructions

  • Heat olive oil in a pan over medium heat. Add chopped garlic and sliced onion; cook until softened.
  • Add diced tomatoes, chopped parsley, thyme, red pepper flakes, salt, and pepper. Cook for 10-12 minutes, stirring occasionally.
  • Stir in olives and capers, mixing well.
  • Add cod loins to the pan, along with lemon juice, salt, and pepper. Cook until the cod is cooked through, about 5-7 minutes.
