- 15–20 black olives
- 10–15 capers
- 4 cod loins
- Lemon juice (to taste)
Instructions
- Heat olive oil in a pan over medium heat. Add chopped garlic and sliced onion; cook until softened.
- Add diced tomatoes, chopped parsley, thyme, red pepper flakes, salt, and pepper. Cook for 10-12 minutes, stirring occasionally.
- Stir in olives and capers, mixing well.
- Add cod loins to the pan, along with lemon juice, salt, and pepper. Cook until the cod is cooked through, about 5-7 minutes.
