- 1 pound ground beef
- 1 onion, chopped
- 1 (15 oz) can chili beans, undrained
- 1 (15 oz) can tomato sauce
- 1 (4 oz) can diced green chilies
- 1 (1 oz) packet chili seasoning mix
- 2 cups elbow macaroni, cooked and drained
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1 tablespoon olive oil (for sautéing)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 3 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon. Drain excess fat.
- Stir in the chili seasoning mix, chili beans (with liquid), tomato sauce, and diced green chilies. Bring to a simmer and cook for 10 minutes, stirring occasionally. Season with salt and pepper to taste.
- In a large bowl, combine the cooked macaroni, chili mixture, sour cream, and 1 cup of shredded cheddar cheese. Stir to combine.
- Transfer the mixture to the prepared baking dish. Top with the remaining 1/2 cup of shredded cheddar cheese.
- Bake in the preheated oven for 20 minutes, or until cheese is melted and bubbly. Let it cool for 5 minutes before serving.
Notes
- For a spicier kick, add diced jalapeños or use hot chili beans.
- If you prefer a smoother texture, you can use a can of tomato paste instead of tomato sauce.
