- 2 tablespoons unsalted butter

- ½ cup cream cheese, softened
- ½ cup powdered sugar

- 1 cup granulated sugar
- 2 teaspoons ground cinnamon
Instructions
- In a medium saucepan, combine water, butter, granulated sugar, and vanilla extract. Bring to a boil over medium heat.
- Once boiling, add the flour and salt all at once, stirring vigorously until a dough forms and pulls away from the sides of the pan. Remove from heat and let cool for 5 minutes.
- Once cooled, add eggs one at a time, mixing until smooth after each addition. The dough should be thick and smooth.
- Heat oil in a deep frying pan or pot to 350°F (175°C).
- While the oil is heating, mix together the brown sugar, cream cheese, powdered sugar, and vanilla extract in a small bowl until smooth and creamy. Stir in the cookie dough until well combined.
- Transfer the dough mixture into a piping bag with a small round tip. Fill each churro with the cookie dough cheesecake mixture.
- Carefully pipe the churro dough into the hot oil, using a piping bag or spoon. Fry the churros in batches for 2-3 minutes or until golden brown and crispy. Remove from the oil and drain on paper towels.
- In a separate shallow bowl, mix together the granulated sugar and cinnamon. Roll each churro in the cinnamon sugar mixture until fully coated.
- Serve immediately and enjoy while warm with a drizzle of extra caramel or chocolate sauce if desired.
Notes
- Ensure the oil is at the right temperature to avoid soggy churros. A thermometer is highly recommended.
- If you prefer a healthier option, you can bake the churros at 375°F for 15-20 minutes until golden brown and crispy.
