For the chicken filling:

  • 1 lb boneless, skinless chicken breasts or thighs

  • Salt and pepper to taste
  • 1/2 cup chicken broth

For the slaw:

  • 1 cup shredded cabbage (green or red)
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 2 tablespoons mayonnaise
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

For the wonton tacos:

  • 1216 wonton wrappers
  • Vegetable oil for frying

For the sauce:

  • 3 tablespoons sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon lime juice

Instructions

  1. Cook the Chicken:
    Heat olive oil in a skillet over medium heat. Season chicken breasts or thighs with garlic powder, onion powder, paprika, cumin, salt, and pepper. Cook the chicken in the skillet for 6-7 minutes on each side or until fully cooked and golden brown. Remove from heat and let it rest for a few minutes. Shred the chicken using two forks and set aside.
  2. Make the Slaw:
    In a bowl, combine the shredded cabbage, carrots, and chopped green onions. In a separate smaller bowl, whisk together mayonnaise, rice vinegar, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss to combine. Set aside.
  3. Prepare the Wonton Shells:
    Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Carefully place wonton wrappers into the oil, folding them into taco shapes. Fry for about 2-3 minutes until golden brown and crispy. Remove from the oil and drain on paper towels.
  4. Make the Sauce:
    In a small bowl, mix together the sweet chili sauce, soy sauce, sesame oil, and lime juice. Stir until well combined.
  5. Assemble the Tacos:
    Once the wonton shells have cooled slightly, fill each shell with shredded chicken, top with slaw, and drizzle with the sweet chili sauce mixture.
  6. Serve:
    Serve the tacos immediately, garnished with extra green onions or cilantro if desired.

Notes

  • You can also use ground chicken or turkey as a substitute for shredded chicken.
  • For added crunch, garnish the tacos with toasted sesame seeds or crushed peanuts.
