Description

Craving the iconic Costco Chicken Bake? Now you can recreate this fan-favorite at home! Juicy chicken, crispy bacon, creamy Caesar dressing, and melted cheese wrapped in pizza dough—this recipe is a deliciously easy copycat that’s perfect for lunch or dinner!

Ingredients

Scale
  • 2 cups cooked chicken, shredded or chopped (rotisserie chicken works great)
  • 1 cup cooked bacon, chopped (about 45 slices)
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 package pizza dough (store-bought or homemade, enough for 23 medium-sized pieces)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Prepare the Filling:
    • In a large bowl, combine the shredded chicken, chopped bacon, mozzarella cheese, cheddar cheese, Parmesan cheese, and Caesar dressing. Stir everything together until well combined. Set aside.
  2. Prepare the Dough:
    • Preheat the oven to 375°F (190°C).
    • Roll out the pizza dough on a lightly floured surface to form a rectangle (about 12×8 inches). You want the dough to be thin enough to roll but thick enough to hold the filling.
  3. Assemble the Chicken Bakes:
    • Spoon the chicken and bacon filling evenly down the center of the rolled-out dough. Be sure not to overfill, as it might spill out when baking.
    • Fold the edges of the dough over the filling to create a sealed pocket, similar to a calzone. Pinch the edges of the dough to ensure the filling is completely enclosed.
    • Place the chicken bakes seam-side down on a greased or parchment-lined baking sheet.
  4. Bake:
    • Brush the tops of the chicken bakes with olive oil and sprinkle with garlic powder and black pepper.
    • Bake in the preheated oven for 20-25 minutes, or until the dough is golden brown and crispy, and the filling is hot and bubbly.
  5. Serve:
    • Once the chicken bakes are done, remove from the oven and let them cool for a few minutes before slicing. Garnish with fresh chopped parsley if desired.
    • Serve with extra Caesar dressing for dipping, if you like.

Notes

  • For a healthier twist, you can use whole wheat pizza dough or reduce the amount of cheese and bacon.
  • You can substitute the Caesar dressing with ranch dressing or a different creamy dressing if preferred.
  • Freezing tip: If you want to make these ahead of time, freeze the unbaked chicken bakes. Simply wrap them in plastic wrap and foil, then bake from frozen at 375°F (190°C) for about 30-35 minutes or until golden brown.
