  • 1 lb Brussels sprouts, trimmed and halved

  • 1/4 cup crumbled cooked bacon (optional, but highly recommended)

Instructions

  1. Prepare the Brussels sprouts:
    • Preheat the oven to 400°F (200°C).
    • Trim the ends of the Brussels sprouts and cut them in half.
    • Toss the Brussels sprouts in olive oil and season with salt and pepper. Spread them out in a single layer on a baking sheet.
    • Roast the Brussels sprouts for 20-25 minutes, flipping halfway through, until they are golden and crispy on the edges.
  2. Make the garlic butter sauce:
    • While the Brussels sprouts are roasting, melt the butter in a large skillet over medium heat.
    • Add the minced garlic and sauté for 1-2 minutes until fragrant, but not burnt.
    • Pour in the heavy cream and bring the mixture to a simmer. Let it cook for 2-3 minutes, allowing it to thicken slightly.
    • Stir in the grated Parmesan cheese and cook for another 1-2 minutes until the sauce is creamy and smooth.
  3. Combine the Brussels sprouts and sauce:
    • Once the Brussels sprouts are done roasting, remove them from the oven and add them to the skillet with the garlic butter sauce.
    • Toss the Brussels sprouts in the sauce to coat evenly. You can cook for another 2-3 minutes if you want the Brussels sprouts to soak up more of the sauce.
  4. Add bacon and garnish:
    • Top with crumbled bacon (if using) and garnish with fresh parsley for color and extra flavor.
  5. Serve:

  • If you want a lighter version, you can reduce the butter and use half-and-half instead of heavy cream.
