Ingredients
Scale
- 1 lb Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 tablespoons butter
- 2 cloves garlic, minced
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup crumbled cooked bacon (optional, but highly recommended)
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Prepare the Brussels sprouts:
- Preheat the oven to 400°F (200°C).
- Trim the ends of the Brussels sprouts and cut them in half.
- Toss the Brussels sprouts in olive oil and season with salt and pepper. Spread them out in a single layer on a baking sheet.
- Roast the Brussels sprouts for 20-25 minutes, flipping halfway through, until they are golden and crispy on the edges.
- Make the garlic butter sauce:
- While the Brussels sprouts are roasting, melt the butter in a large skillet over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant, but not burnt.
- Pour in the heavy cream and bring the mixture to a simmer. Let it cook for 2-3 minutes, allowing it to thicken slightly.
- Stir in the grated Parmesan cheese and cook for another 1-2 minutes until the sauce is creamy and smooth.
- Combine the Brussels sprouts and sauce:
- Once the Brussels sprouts are done roasting, remove them from the oven and add them to the skillet with the garlic butter sauce.
- Toss the Brussels sprouts in the sauce to coat evenly. You can cook for another 2-3 minutes if you want the Brussels sprouts to soak up more of the sauce.
- Add bacon and garnish:
- Top with crumbled bacon (if using) and garnish with fresh parsley for color and extra flavor.
- Serve:
- Serve the Brussels sprouts immediately as a delicious side dish to any meal.
Notes
- If you want a lighter version, you can reduce the butter and use half-and-half instead of heavy cream.
- You can also add some red pepper flakes to the garlic butter sauce for a touch of heat.
- If you prefer a vegetarian version, simply omit the bacon or use plant-based bacon.
