Description

Thisย Copycat Starbucks Potato Chive Bakeย recreates that iconic creamy, cheesy potato side โ€“ now even better fresh from your oven! Perfect for brunch or as a cozy side dish.ย 


Ingredients

Main Ingredients:

  • 2 lbs russet potatoes, peeled & diced ยฝโ€ (about 4 medium)

  • 1 tbsp olive oil

  • 1 tsp salt

  • ยฝ tsp black pepper

Creamy Sauce:

  • 4 tbsp butter

  • ยผ cup all-purpose flour

  • 2 cups whole milk

  • ยฝ cup heavy cream

  • 1 cup shredded Gruyรจre cheese

  • ยฝ cup grated Parmesan

  • ยผ cup fresh chives, chopped

  • 2 garlic cloves, minced

  • 1 tsp onion powder

  • ยฝ tsp nutmeg

Topping:

  • ยฝ cup panko breadcrumbs

  • 2 tbsp melted butter

  • 2 tbsp grated Parmesan

  • 1 tbsp fresh chives


Instructions

  1. Prep Potatoes: Toss diced potatoes with oil, salt & pepper. Roast at 425ยฐF for 25 mins until tender.

  2. Make Sauce: Melt butter, whisk in flour 1 min. Gradually add milk & cream until thickened. Stir in cheeses, chives, garlic & spices.

  3. Combine: Fold roasted potatoes into sauce. Transfer to greased 9ร—9โ€ณ baking dish.

  4. Top: Mix panko, melted butter & Parmesan. Sprinkle over potatoes.

  5. Bake: 20 mins at 375ยฐF until bubbly & golden. Garnish with chives.

Notes

  • Make Ahead: Assemble 1 day ahead (add topping just before baking)

  • Lighter Version: Use half-and-half instead of cream
