This Copycat Starbucks Potato Chive Bake recreates that iconic creamy, cheesy potato side – now even better fresh from your oven! Perfect for brunch or as a cozy side dish.
Ingredients
Main Ingredients:

2 lbs russet potatoes, peeled & diced ½” (about 4 medium)

1 tbsp olive oil

1 tsp salt

½ tsp black pepper
Creamy Sauce:

4 tbsp butter
-
¼ cup all-purpose flour
-
2 cups whole milk
-
½ cup heavy cream
-
1 cup shredded Gruyère cheese
-
½ cup grated Parmesan
-
¼ cup fresh chives, chopped
-
2 garlic cloves, minced
-
1 tsp onion powder
-
½ tsp nutmeg
Topping:
-
½ cup panko breadcrumbs
-
2 tbsp melted butter
-
2 tbsp grated Parmesan

1 tbsp fresh chives
Instructions

Prep Potatoes: Toss diced potatoes with oil, salt & pepper. Roast at 425°F for 25 mins until tender.

Make Sauce: Melt butter, whisk in flour 1 min. Gradually add milk & cream until thickened. Stir in cheeses, chives, garlic & spices.

Combine: Fold roasted potatoes into sauce. Transfer to greased 9×9″ baking dish.

Top: Mix panko, melted butter & Parmesan. Sprinkle over potatoes.

Bake: 20 mins at 375°F until bubbly & golden. Garnish with chives.
