Description

Corn Fritters are crispy, golden snacks or side dishes that are easy to make and perfect for any meal. These fritters combine sweet corn with a savory batter, resulting in a deliciously crunchy exterior and tender interior.


Ingredients

  • 1/2 cup all-purpose flour

Instructions

  • Prepare the batter: In a large mixing bowl, combine the flour, cornmeal (if using), baking powder, salt, pepper, and smoked paprika. Add the corn kernels, chopped green onions, parsley, and shredded cheese (if using), and toss to coat the ingredients with the dry mixture.
  • Add the wet ingredients: Stir in the milk and beaten egg to form a thick batter. If the batter seems too thick, you can add a little more milk to reach a scoopable consistency.
  • Fry the fritters: Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot, drop spoonfuls of the batter into the pan, flattening them slightly with the back of the spoon. Fry the fritters for about 2-3 minutes per side, or until golden brown and crispy. Be sure not to overcrowd the pan.
  • Drain and serve: Remove the fritters from the skillet and drain them on a paper towel-lined plate to remove excess oil. Repeat with the remaining batter.
