Description

Corn Pudding Casserole is a creamy, comforting side dish that blends sweet corn with a smooth, custardy base. With a golden, slightly crispy top and a rich, soft center, it’s the perfect complement to your holiday meals or any family gathering. This dish is quick to prepare and packed with flavor.

Ingredients

Scale
  • 2 cans (15 oz each) whole kernel corn, drained
  • 1 can (15 oz) creamed corn
  • 1/2 cup unsalted butter, melted
  • 1 cup sour cream
  • 2 large eggs, beaten
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp baking powder
  • 1 cup shredded cheddar cheese (optional, for extra richness)

Instructions

  1. Prepare the Oven & Baking Dish: Preheat the oven to 350°F (175°C). Grease a 9×9-inch or 2-quart casserole dish with butter or cooking spray.
  2. Combine Wet Ingredients: In a large mixing bowl, combine the melted butter, sour cream, and beaten eggs. Stir until well combined.
  3. Add Dry Ingredients: To the wet mixture, add the sugar, flour, salt, pepper, and baking powder. Mix until smooth.
  4. Add the Corn: Stir in both the whole kernel corn and creamed corn until evenly distributed throughout the batter.
  5. Optional Cheese Addition: If you want to add cheese, fold in the shredded cheddar cheese for extra creaminess and flavor.
  6. Assemble the Casserole: Pour the corn mixture into the prepared baking dish, spreading it out evenly.
  7. Bake: Bake the casserole for 45-50 minutes, or until the top is golden brown and the casserole is set and firm.
  8. Serve & Enjoy: Let the casserole cool for a few minutes before serving. It’s delicious warm, and pairs well with roasted meats, turkey, or ham.

Notes

  • If you prefer a sweeter version, you can add a little more sugar to taste.
  • For a savory twist, add some diced green onions or bell peppers to the mixture.
  • This casserole can be made ahead of time. Just prepare it the day before, refrigerate, and bake it when ready.
  • You can swap the cheddar for Monterey Jack, mozzarella, or even a spicy pepper jack cheese for extra flavor.
