Ingredients

  • 1 cup cooked corned beef, shredded
  • 1/2 cup sauerkraut, drained and chopped
  • 1/4 cup Swiss cheese, shredded
  • 1/4 cup Thousand Island dressing (optional, for dipping)
  • 8 egg roll wrappers
  • 1 tablespoon vegetable oil (for frying)
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the shredded corned beef, chopped sauerkraut, and Swiss cheese. Season with salt and pepper to taste.
  2. Place an egg roll wrapper on a clean surface with one corner facing you. Spoon about 2-3 tablespoons of the corned beef mixture onto the center of the wrapper.
  3. Fold in the sides of the wrapper and roll it tightly from the bottom, sealing the edge with a little water.
  4. Heat vegetable oil in a frying pan over medium heat. Once the oil is hot, add the egg rolls to the pan and cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. Remove from the pan and drain on paper towels. Serve hot with Thousand Island dressing for dipping (optional).

Notes

  • For a lighter version, you can bake the egg rolls at 400°F (200°C) for 15-20 minutes, turning halfway through, until golden and crispy.
