- 1 cup smooth peanut butter
- 1 cup sugar
- 1 cup light corn syrup
- 1 tsp vanilla extract
- 6 cups cornflakes cereal
- 1 cup semisweet chocolate chips (optional, for drizzling on top)
Instructions
- Prepare the pan: Line a baking sheet or a 9×13-inch pan with parchment paper or lightly grease it. Set aside.
- Make the syrup mixture: In a large saucepan over medium heat, melt the butter, peanut butter, sugar, and corn syrup together. Stir constantly until the mixture is smooth and the sugar has dissolved, about 3-5 minutes.
- Add vanilla and cornflakes: Remove the saucepan from the heat and stir in the vanilla extract. Gently fold in the cornflakes, making sure they are evenly coated with the peanut butter syrup mixture.
- Shape the candy: Once the cornflakes are coated, drop spoonfuls of the mixture onto the prepared baking sheet or press it into the pan to create a more compact, bar-like shape.
- Optional: Add chocolate drizzle: If using chocolate chips, melt them in the microwave or over a double boiler, then drizzle the melted chocolate over the top of the cornflake clusters.
- Let set: Allow the cornflake candy to cool and set at room temperature for 30 minutes, or refrigerate for faster results. Once set, break into pieces or cut into bars.
- Serve: Serve the cornflake candy immediately or store in an airtight container for up to a week.
Notes
- You can add a pinch of salt to the peanut butter mixture for a sweet and salty flavor.
- For added flavor, you can mix in some mini marshmallows or add a bit of butterscotch chips along with the chocolate drizzle.
