Description

These Cornflake Candy treats are crunchy, sweet, and easy to make! With a simple combination of cornflakes, peanut butter, and chocolate, these no-bake candies are perfect for satisfying your sweet tooth.

Ingredients

Scale
  • 1/2 cup unsalted butter
  • 1 cup smooth peanut butter
  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 tsp vanilla extract
  • 6 cups cornflakes cereal
  • 1 cup semisweet chocolate chips (optional, for drizzling on top)

Instructions

  1. Prepare the pan: Line a baking sheet or a 9×13-inch pan with parchment paper or lightly grease it. Set aside.
  2. Make the syrup mixture: In a large saucepan over medium heat, melt the butter, peanut butter, sugar, and corn syrup together. Stir constantly until the mixture is smooth and the sugar has dissolved, about 3-5 minutes.
  3. Add vanilla and cornflakes: Remove the saucepan from the heat and stir in the vanilla extract. Gently fold in the cornflakes, making sure they are evenly coated with the peanut butter syrup mixture.
  4. Shape the candy: Once the cornflakes are coated, drop spoonfuls of the mixture onto the prepared baking sheet or press it into the pan to create a more compact, bar-like shape.
  5. Optional: Add chocolate drizzle: If using chocolate chips, melt them in the microwave or over a double boiler, then drizzle the melted chocolate over the top of the cornflake clusters.
  6. Let set: Allow the cornflake candy to cool and set at room temperature for 30 minutes, or refrigerate for faster results. Once set, break into pieces or cut into bars.
  7. Serve: Serve the cornflake candy immediately or store in an airtight container for up to a week.

Notes

  • You can add a pinch of salt to the peanut butter mixture for a sweet and salty flavor.
  • For added flavor, you can mix in some mini marshmallows or add a bit of butterscotch chips along with the chocolate drizzle.
  • If you prefer a more crispy texture, be sure not to overmix the cornflakes when coating them with the syrup.
  • These are great for holiday gift-giving or making with kids!
