  • 2 cups cornflakes

  • 1 cup semisweet chocolate chips

  • 1/2 cup unsalted butter

  • 1/2 cup light corn syrup

  • 1 cup granulated sugar

  • 1/2 teaspoon vanilla extract

  • Pinch of salt


Instructions

  1. Line a baking sheet with parchment paper or a silicone mat for easy removal.

  2. In a medium saucepan over medium heat, melt the butter, corn syrup, and sugar. Stir occasionally until the mixture comes to a simmer and the sugar has dissolved, about 2-3 minutes.

  3. Bring the mixture to a boil, stirring constantly. Once boiling, let it cook for 3 minutes without stirring to allow the syrup to thicken slightly.

  4. Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt.

  5. Pour the cornflakes into a large mixing bowl.

  6. Pour the hot syrup mixture over the cornflakes and gently stir to coat the cornflakes evenly.

  7. In a separate bowl, melt the chocolate chips in the microwave or on a stovetop using a double boiler until smooth.

  8. Pour the melted chocolate over the coated cornflakes and stir until everything is evenly mixed and coated with chocolate.

  9. Spread the mixture onto the prepared baking sheet and press it into an even layer.

  10. Refrigerate the brittle for at least 30 minutes to set and firm up.

  11. Once set, break the brittle into pieces and serve.

Notes

  • You can add other ingredients to the brittle, such as chopped nuts (almonds or pecans) or dried fruit, for extra flavor and texture.

  • For a more decadent version, drizzle white chocolate over the top of the brittle after it’s set.
